cup thinly sliced English hothouse cucumber (16 slices) |

cup cilantro leaves or to taste |

- Combine peanut butter, green onions, soy sauce and sesame oil in small bowl.
- Spread evenly over bread slices.
- Layer 2 bread slices evenly with carrots, half of the cucumber, cilantro, chicken and remaining cucumber.
- Top with remaining bread slices, peanut butter side down.
